Raw Iced Avocado Brownies

I learned to make this while working at a fancy shmancy retreat center in Los Angeles. The guests went crazy for them! The best part is, they couldn’t be easier. I turn to these whenever I want a decadent chocolate treat (which is often) but I can’t be bothered to turn my oven on.

Ingredients:

Brownie base 
1 cup cashews
1 cup pitted dates 
⅓ cup raw cacao powder 
Pinch of sea salt 

Icing 
1 avocado 
3 tablespoons maple syrup 
1 tablespoon coconut oil 
3 tablespoons cacao powder 
2 teaspoons vanilla 
Pinch of sea salt 
Pinch of cinnamon 

Directions:

  1. Combine brownie base ingredients in a food processor and blend until mixture resembles dirt. Press into an 8x8 pan. Rinse and wipe out food processor. 

  2. Combine icing ingredients in a food processor and blend until smooth. 

  3. Spread icing over the brownie base and place in freezer for 1 hour. 

  4. Cut into squares and enjoy! Store leftover brownies in the refrigerator for up to 5 days.
