Sweet & Spicy Shrimp with Basil

Sweet & Spicy Shrimp with Basil
Serves 4 
Total time:  20  minutes 


Ingredients:
 

3 Fresno or 2 jalapeno chiles, roughly chopped
6 garlic cloves, smashed and peeled
4 tablespoons avocado or coconut oil, divided
¼ cup coconut sugar  
2 tablespoons fish sauce
¾ teaspoon kosher sea salt
1 pound peeled and deveined shrimp
2 cups basil
2 teaspoons sesame seeds

Directions: 

  1. Blend chiles, garlic, 3 tablespoons oil, coconut sugar, fish sauce and sea salt until smooth. Pour sauce over shrimp and let marinate for 10 minutes. 

  2. Heat a large nonstick skillet over medium-high. Add remaining oil and swirl to coat the pan. Use a slotted spoon to remove shrimp from marinade and cook 1-2 minutes per side, until shrimp is cooked through. Stir in basil to wilt. Garnish with sesame seeds and enjoy!
